Instructions:

For the ginger fig iced tea, first cut the dried figs into eighths and add them to a liter of boiling water. Peel and grate or chop a 2-3 cm piece of ginger and add to the boiling water as well.

Cover and simmer both for about 15 minutes. Then fish the fig pieces out of the water into a sieve. Sprinkle the green tea into the hot water and steep for 3 minutes.

Meanwhile, strain the figs with a spoon through the strainer into a pitcher. Then pour the tea through the strainer into the pitcher in the same way. Squeeze half a lemon and stir the juice into the tea together with 2 tablespoons of honey.

Taste a little and add a glass of water if desired, if the tea is too strong. If you want the iced tea to have less “flankers”, pour through a tea strainer again.

Allow to cool slightly and steep for a few hours or overnight in the refrigerator.

Preparation Tip:
