For glazed sweet potatoes, wash the orange thoroughly, grate the peel and squeeze out the juice. Peel the sweet potatoes and boil in lightly salted water until not quite soft (about 10 minutes).

Preheat the oven to 180 °C top and bottom heat. Heat the orange juice and melt the sugar and butter in it. Mix in the orange zest.

Slice the sweet potatoes and line a baking dish with them like a roof tile. Drizzle orange syrup over the sweet potato slices. Place dish in oven and bake for about 20 minutes.
