Instructions:

For the pancakes, beat the eggs in a bowl and mix with milk, flour, melted butter and a pinch of salt to form a thin batter.

Heat a little oil in a frying pan. Pour in a thin layer of batter and bake into pancakes, swirling the pan in a circle and turning once. Bake the rest of the dough also into pancakes and keep them warm stacked on top of each other.

For the filling, finely chop the shallots and sauté in a little oil until light. Finely chop the garlic, add it as well and now mix in the minced meat. Break up well with a wooden spoon and fry well, stirring repeatedly. Add the parsley, season with salt, pepper and nutmeg or marjoram and roast until all the liquid has evaporated (or pour it off).

Mix with crème fraîche to a creamy mixture. Season again if necessary.

Preheat oven to 180-200 °C.

Place pancakes on top, spread with some meat pancake mixture and roll up again. Grease a suitable roasting pan with oil and place the pancakes in it.

For the glaze, mix sour cream with whipped cream and egg yolks until smooth, season with salt and pepper. Stir in any leftover meat mixture and pour over the pancakes.

Sprinkle the meat pancakes with grated cheese and bake in a hot oven for about 15 minutes until the glaze has set.
