1. brown beef in 1 tbsp. clarified butter on all sides, cook in hot oven at 200 °C (convection oven: 180 °C /gas oven: level 3) for about 15 minutes until done. In the meantime, clean and rinse vegetables, cut into strips. Rinse the cooled sprouts and shake dry. Remove peel from carrot and finely chop. Cut beef into strips.

Heat remaining lard, roast beef strips until crispy, remove from frying pan and keep warm, then add vegetables and steam until crisp, season with herb sea salt, masala and chili. Heat meat briefly, bring to the table on the spot.

3. basmati rice goes well with this.
