For the grilled pork shank, cut the garlic cloves into sticks and lard the meat with them. Mix spices with oil and red wine.
Baste stilton and let sit for 3 hours with lid closed. Put into the heated broiler and grill for 1 hour.
In between, turn to the other side and brush with marinade or drizzle with malt beer. Round off the roast stock with whipped cream.
