Finely grate the hazelnuts and quickly mix with flour, butter, sugar, egg, lemon zest and vanilla sugar until a smooth dough. Let the dough rest for about 1 hour in the refrigerator.Form finger-thick rolls from the dough, cut into 1cm thick pieces and roll into balls.Place on a baking tray with baking paper and form a depression in the center with a wooden spoon handle. Bake at 190°C for 7-8 minutes until golden brown and let cool.For the garnish, cut the dried apricots into small pieces, mix with the apricot jam and fill into the cavity.
