Instructions:

For the Hessian celery soup, wash and peel the celery and boil in salted water until tender.

Pass through a sieve or puree with a hand blender and add back to the soup.

Mix the cornstarch with a little cold water, add to the boiling soup, season to taste.

Just before serving, add the finely diced ham and butter to the celery soup.

Preparation Tip:

Hessian celery soup tastes great even without ham.
