Cut the woody ends of the asparagus spears into small pieces. Cook in boiling hot salted water for 5 minutes, drain (save the cooking juices!), season and place drained in a suitable container.

Cook the potatoes in salted water without peeling, cool a little, peel and cut into slices. Divide the garlic bulb into its cloves, remove the peel and place on aluminum foil coated with olive oil. Fold and bake in the oven at 200 degrees for about 30 minutes.

Peel the shallots, dice finely and mix in a baking bowl with oil, juice of one lemon, wine and the stock. Season to taste with salt and freshly ground pepper. Add the garlic cloves and the potato slices. Spread everything evenly over the asparagus spears. Marinate for about 1 hour, turning the asparagus spears a few times to the other side. Spread evenly on plates, sprinkle with herbs.

It goes well with dark baguette.
