For the matie salad, steam and peel the potato.

Peel the onions. Cut the vegetables and fish into fine strips or rings. Mix all ingredients. Beat the yolks, mustard and vinegar with salt, pepper and sugar vigorously in a high mixing bowl with a hand mixer.
