Instructions:

First make the strudel dough according to the recipe. Brush with oil, wrap in plastic wrap and let rest for half an hour.

Strain medlars, cut apples into small cubes and mix with flaky cut biscuits, refine with cinnamon and lemon juice.

Cut the strudel dough into quarters, gradually pull out each piece, spread with medlar puree. If the puree is too firm, dilute it with a little apple juice to make it easier to spread.

Spread a quarter of the dough with the puree, spread the apple mixture over it, brush the rest of the dough with melted butter and roll it up carefully.

Do the same with the other pieces of dough, brush with beaten egg-milk mixture.

Bake in the oven at 170 °C for about 40-45 minutes.
