Instructions:

For the mini stollen, first soak the candied fruit and raisins in rum. Add the bitter almond flavoring. Preheat the oven to 200 °C.

Mix the flour and baking powder on the work surface. Press a hollow in the center. Add the curd, egg, butter, vanilla sugar, sugar, lemon zest and a pinch of salt and knead lightly.

Then knead in sliced and ground almonds, candied fruit and raisins.

Divide the dough among the mini loaf pans (preferably made of silicone) and place in the oven for 10 minutes on the middle rack. Then reduce the heat to 170 °C and bake for another 10-15 minutes. It is best to do a test with a stick.

Remove the mini-stollen from the ramekins and sprinkle with a thick layer of powdered sugar while they are still warm.
