Wash the tomatoes, remove the stalks, cut them into slices, place them in a bowl and sprinkle with salt, pepper and oregano. Drizzle with two tablespoons of olive oil and one tablespoon of balsamic vinegar and marinate for about half an hour. Wash and clean the melanzani, cut them into slices, salt them and let them marinate for about 20 minutes. Then pat dry and sprinkle with a little pepper. Drain the mozzarella, peel the garlic cloves and slice both. Fry the garlic slices briefly in two tablespoons of heated olive oil, remove from the pan. Sauté the slices of melanzana in the heated oil on both sides, dab off the fat. Layer two “Pisa” towers of the tomato, melanzani and mozzarella slices on each of four plates. Mix remaining olive oil with remaining balsamic vinegar, season with salt and pepper and drizzle over turrets.
