Sauté the finely chopped onions in 1 tablespoon of butter. Pour milk over the bread cubes and mix. Cream the remaining butter. Season with freshly grated nutmeg. Gradually add the egg yolks. Beat the egg whites with a pinch of salt until stiff. Mix the butter mixture, the snow and the onions into the bread cubes and work everything well. Press together lightly. Leave to stand for half an hour. Then divide the mixture into two halves and form each into a 6 cm thick roll. Wrap each roll in a damp napkin or cling film. “Poke” cling film with a needle several times (poke holes). Seal the ends and cook in hot salted water for about 40 minutes. Lift out, unwrap and cut into slices. Drizzle with melted butter if desired.
