A cake recipe for all foodies:

Beat eggs and sugar until thick and creamy – in about 5 min. Finely grate the lemon peel and add it to the milk and olive oil. Stir everything well.

Mix flour, baking powder and salt and fold into the egg/sugar mixture. Pour the dough into a 24 x 38 cm baking pan with a slightly higher edge and bake in a heated oven at 180 °C for 35 minutes. Cool slightly.

Make a thick glaze with powdered sugar and juice of one lemon (approx. juice of 1 lemon), brush the cake with it and sprinkle with plucked thyme.
