Put the bones in hot water, boil and drain. When cooled down, boil for 2 hours, pass through a straining cloth and make the soup again. Add coarsely chopped root vegetables and simmer on low heat for a quarter of an hour. Add the ox tenderloin seasoned with ground pepper and simmer for 10 minutes. Cook the marrow bones as well.

Place one slice of ox loin and one marrow bone on a wooden board and sprinkle with salt and pepper. Serve with freshly grated horseradish, farmhouse bread and a mug of the strong root broth.
