For the oyster mushrooms with sugar snap peas, first sauté the finely chopped onion in olive oil. Add the finely chopped sugar snap peas and sauté.

Season with thyme. When the sugar snap peas are well sautéed crisp (and no water in the pan or wok pot), add the finely chopped oyster mushrooms and sauté until hot.

Season with garlic, salt and pepper. Fry for about 5 minutes and sprinkle with lemon juice.
