Instructions:

For the pear cake with cranberries, first separate the eggs. Beat the egg whites with a pinch of salt until stiff. Mix egg yolks, raw cane sugar and hazelnut oil until foamy. Briefly mix in hazelnuts and egg liqueur.

Mix in whole spelt flour and fold in the beaten egg whites. Pour into a greased and floured baking pan. Layer the sliced pears on top and spread the cranberries in between.

Bake the pear cake with cranberries in the oven at 170 °C.

Preparation Tip:

For the pear tart with cranberries use homemade cranberry jam.
