The day before bring whipped cream and chocolate to a boil, cool for one night.
Cover the short pastry base with the pears cut into wedges. Whip whipped cream until stiff, adding cream stiffener as directed, and spread evenly over pears. Chill.
If you like, you can decorate the cake with chocolate sprinkles and whipped cream.
