To make the peppermint syrup, start by washing the peppermint and spinning it dry. Then mix with part of the sugar and crush with the help of a blender.
Now heat the mint puree with the remaining sugar, the water and the juice of the lemon in a small saucepan and simmer (at least 5 minutes) until the sugar has completely dissolved.
Then strain the warm mint syrup through a cloth, let it cool and then bottle it.
Preparation Tip:
Peppermint syrup tastes especially good as a refreshing drink diluted with mineral water, but it's also great for garnishing sorbets, creams or ice cream.
