Instructions:

For the pineapple muffins, preheat the oven to 200°C degrees and line a muffin tray with paper cups. Drain the pineapple and collect the juice. Mix the flour with salt, baking powder and baking soda. In a mixing bowl, whisk the egg with the sugar, vanilla sugar, oil, milk, whipping cream and 100 ml of the pineapple juice. Fold in the flour mixture and finally stir in the pineapple chunks. Pour the batter into the pan and bake for 20 to 25 minutes at 200°C degrees. For the glaze, mix the powdered sugar with the pineapple juice until smooth and spread on the cooled muffins. Sprinkle the coconut over the pineapple muffins.

Preparation Tip:

If you like, you can also replace one tablespoon of pineapple juice with rum in the icing for the pineapple muffins.
