For the pretzels, first preheat the oven to 190 degrees. Crumble the yeast and dissolve in water. Put the flour in a bowl and make a well in the middle.

Pour the dissolved yeast into it and mix it with the flour. Gradually add 500 ml of water and the salt. Adjust the amount of water as needed. Work the dough thoroughly until it bubbles and comes away from the sides of the bowl.

Dust flour on a surface, place the dough on it and form a long roll. Cut equal-sized pieces from the roll and roll out the dough pieces into rolls. Make sure the rolls are thick in the middle and thinner at the ends.

Then shape into pretzels, cover and let rest for 10 minutes. In the meantime, heat 1 l of water with 50 g of baking soda in a wide saucepan. Allow to cool slightly and briefly dip the pretzels in it.

Immediately put them on a baking tray covered with baking paper and sprinkle the pretzels with coarse salt, peeled sesame seeds, poppy seeds or cheese. Bake the pretzels in the preheated oven at 200 degrees for about 20 minutes.
