Instructions:

Quince cut very small and put in a jar with brandy, cinnamon and lemon and put in a sunny place for 6 weeks.

Shake several times, strain.

Boil sugar with water and stir overcooled into the mixture.

Fill quince liqueur into bottles.

Preparation Tip:

Preparation variations: Possibly add a pinch of cloves, ginger or coriander. You can also add raisins to the quince liqueur. Possibly add 1-2 drops of bitter almond oil, but not more, as too much would drown out the quince flavor.
