For quince paste, first brush the quinces clean under running water. Then peel, quarter, cut out the core and cut into small pieces.

Put the quinces in a pot with the lemon juice, orange juice, apple juice and water and bring to a boil.

Cook over medium heat for about 40-50 minutes.

Then process in a food processor to puree and simmer uncovered for another 40-50 min. until thickened. Stir frequently.

Add the almonds, grated lemon and orange zest, and pinch of cardamom. Sweeten with honey as desired.

Spread a baking sheet with baking paper and spread the mixture on it to a thickness of 1 cm. Place the baking tray in the oven on the middle shelf and dry the paste at 70 °C for about 3 hours.

Remove the tray and turn the quince plate over, remove the baking paper and put the plate back in the oven for about another 1-2 hours. The mixture should become even drier but still remain elastic.

Let cool and and cut into diamonds or squares. Store between parchment paper in a tightly closing tin. After a few days, the quince paste tastes even better.
