Instructions:

Heat half the quantity of poppy seed oil in a heatproof porcelain or glass bowl to 80 °C, sprinkle in a little coarse sea salt. Season the skin side of the fillets with white pepper and a little coarse sea salt. Top with thyme sprigs, bay leaves, lovage leaves and vervain leaves. Place skin side up in the preheated oil and drizzle with the remaining poppy seed oil. Cover the dish tightly with cling film. Cook in the oven preheated to 80 °C for approx. 15 minutes. Dissolve soaked gelatine in some warm wine and mix with apple puree and remaining wine. Stir in elderflower juice, season to taste with spices.
