Instructions:

For the Schmarren, peel the apples, remove the core, cut into fine wedges and marinate with lemon juice. Soak the raisins in rum and leave to soak for a short time.

Beat the egg whites until stiff. Mix the yolks with the milk, vanilla sugar, salt and a good pinch of cinnamon. Then mix the flour into the mixture.

Now fold in the whipped cream and the raisins. Melt butter in a pan and put in the apple slices. Sprinkle sugar on top and let it caramelize briefly.

Pour the batter over the apples. Put the pan in the oven at 180 degrees for about 8-10 minutes. Then tear the Schmarren in the pan.

Serve the Schmarren sprinkled with powdered sugar (or a mixture of powdered sugar and cinnamon).
