Mix the butter well with the cheese, knead in the whipped cream, salt and paprika powder. Sift the baking powder with the flour and knead in as well. Cut the shortcrust pastry into two or three portions and leave to rest in the refrigerator for 2 hours, wrapped in plastic wrap.

Remove the dough portions one by one from the refrigerator and roll out on a floured work surface to a thickness of about 6 mm. Cut out cookies of any size and place them on a baking tray. Mix the yolks with 1 tablespoon of water. Coat the cookies with the mixture and sprinkle with sesame seeds, caraway seeds, poppy seeds or chopped pistachios, if desired, or place an almond half in the center. Bake the cookies on the middle rack at 200-210 °C for 10-15 min. While still warm, carefully lift the cheese cookies from the tray with a wide kitchen knife and cool on a cooling rack.
