For the shortbread cookies on manual variant first mix the flour, powdered sugar, vanilla sugar and lemon sugar.

Then crush the butter and crumble it with the previously mentioned ingredients. Crumble the butter and flour-sugar mixture between your fingers. Then add the yolks and knead everything on the countertop into a smooth dough.

For the machine version, crush the butter and put it in the food processor with dough hook. Then add the yolks and while the machine is running slowly, add the vanilla sugar, lemon sugar and powdered sugar. When the mixture is even, slowly add the flour.

Knead everything well and whether done by hand or machine, place the dough on a plate, wrap with plastic wrap and refrigerate.

Then roll out the dough, cut out shapes and bake in the oven until they have the desired color.
