For simple coconut biscuits, first line a baking tray with baking paper and place the wafers on it. Preheat the oven to 170 °C.

Mix the egg whites with the sugar, the coconut flakes and the lemon zest over a bain-marie. Allow to cool a little.

Depending on the moisture of the coconut mass, stir in a little flour if necessary. Pour the mixture into a piping bag and pipe onto each wafer. Let rest for 10 minutes before baking.

Place plain coconut bushels in the oven for about 10-15 minutes. Be careful not to let them get too dark.
