Skin the tomatoes, cut them in half, remove the seeds and chop the flesh. Cut the mozzarella into very small cubes. Heat the oil in a shallow wide saucepan. Peel the garlic and roast the clove whole in the hot oil until it turns dark brown, then remove it. Pour in the tomatoes and the basil. Add salt, season with pepper and cook over medium heat until thick, about 10 minutes. In the meantime, make the pasta al dente, drain and drain.
