Instructions:

First make the dampfl. To do this, mix all the ingredients for the pre-dough well with a mixer and leave covered (towel) at 20 °C for 5-20 hours.

Then remove a heaping tablespoon and store in the refrigerator in an unsealed jar.

For the main dough, mix all the ingredients with the mixer for 10 minutes and let stand until the dough has risen.

Knead with wet hands, pour into the baking pan(s) and sprinkle with grains.

Cover the baking dish(s) with the dough and let rise another time for about 60-90 minutes.

Then finish baking in the preheated oven first for 10 minutes at 250 °C , then for 50 – 60 minutes at 180 °C.

The bread can also be baked with nuts, etc..
