Prepare strudel sheets according to package instructions. Preheat oven to 190° C. Fry onion with parsley in oil. Mix minced meat with breadcrumbs and egg and season with oregano, salt and pepper. Brush one strudel sheet with butter and place a second one on top. Spread half of the filling on the dough, leaving a hand-width strip of dough free, and spread the roasted onion over the mince. Place gherkins, tomatoes and ham strips on top. Fold in the side edges of the dough and roll up with the help of the cloth. Press the edges tightly. Do the same with the rest of the dough. Place strudel seam side down on a baking sheet lined with baking paper, brush with a little melted butter or margarine. Bake in the preheated oven on the middle shelf for about 30 minutes until golden brown.
