Instructions:

For the spinach strudel with salmon, heat spinach leaves with a little milk, add garlic, drain in a sieve and let cool.

Roll out puff pastry on a baking sheet, spread spinach evenly on it. Cut feta into cubes and sprinkle over spinach. Season with nutmeg, pepper and salt. Salt salmon and place on spinach.

Roll up or fold in puff pastry and press tightly at ends. Brush with beaten egg. Bake in heated oven for approx. 30-40 minutes at approx. 180 °C.

For the sauce, mix sour cream and yogurt and season with salt, pepper and a little nutmeg (freshly grated). Chop the parsley and mix in. Leave the sauce to cool.

Portion the spinach strudel with salmon and arrange on plates with the sauce.

Preparation Tip:

If you would like to try vegetarian version, then make the spinach strudel without salmon.
