This quick and easy strawberry coconut cake doesn’t need any oil and is still super fluffy and tasty. Wash the strawberries, remove the sepals and cut them in half.Line a baking tray with baking paper.

Beat the eggs well in a bowl. Add the sugar, vanilla pulp, lemon juice and a pinch of salt.Sift the baking powder into the flour and add to the egg and sugar mixture. Finally, pour in the buttermilk and mix everything well until fluffy.

Spread the dough mixture on the baking paper, spread and smooth. Sprinkle cane sugar, spread the strawberry pieces on the dough and sprinkle with coconut flakes and pistachio pieces.

Bake the strawberry coconut cake in the oven preheated to 180°C (hot air) for about 30 minutes.
