For the strawberry elderflower jam, pluck the elderflowers from the cones (be careful not to let any little critters slide along!).

Wash and quarter the strawberries and then mix them together with the citric acid, the blossoms and the preserving sugar. Refrigerate for at least 2 hours to infuse.

Strain the berries and bring to a boil. Boil the strawberry-elderflower jam for at least 3 minutes until bubbling (do a gelling test!!) and then immediately fill into jars and seal.

Preparation Tip:

Picking the flowers for strawberry elderflower jam is laborious, but the result is definitely worth it.
