Instructions:

Mix the sponge cake crumbs, chocolate and butter well in a small bowl, press the mixture evenly onto the bottom of a prepared cake pan.

For the filling, mix well ricotta, sour cream, lemon juice, rum and sugar. Mix in the biscuit crumbs. Dissolve gelatin as directed on package and stir into ricotta mixture.

Whip the cream until stiff and gently fold into the ricotta mixture with the biscuit crumbs. Spread the filling on the cake base and smooth it out. Refrigerate the cake for at least three hours, but preferably overnight.

Before serving, wash strawberries, cut them in half and top the cake tightly. You may also be able to cover the strawberries with cake jelly. Sprinkle the cake with chopped pistachios and decorate with a mint leaf.
