For the hearty chicken noodle pot with horseradish, peel the onion and cut into rough cubes. Wash and clean the carrots and cut them into slices about 1 cm thick. Check the chicken if there are no packed insides in the body.

Now heat the oil in a soup pot and fry the carrots with the onions. When the vegetables have taken some color, add the soup. Add the chicken to the soup.

Add the parsley, juniper seeds and bay leaves and let everything simmer at medium heat for about 50 minutes. In the meantime, cook the pasta in plenty of salted water until al dente and strain.

Then do a spot check with a fork….if the chicken meat comes off easily, the chicken is cooked through. Now remove the chicken from the soup and (if it’s not already falling apart) cut a soup-sized piece and add it back to the soup.

Put some noodles in a soup plate, pour some soup over it (with vegetables and meat) and serve the chicken noodle pot refined with horseradish.
