Instructions:

Wash herbs and shake dry.

Remove seeds from peppers and cut into fine rings.

Wash asparagus, peel and shorten to the same lengths.

Prepare glass noodles according to package directions.

Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.

Place herbs on top, top with glass noodles, bell bell pepper and asparagus. Sprinkle with sesame seeds.

Form rice paper into rolls.

Serve with dip of your choice.

Preparation Tip:

These summer rolls are especially pretty: the green of the asparagus, red and yellow of the peppers and dark herb leaves create a beautiful color contrast!
