Instructions:

Wash the parsley, shake dry and pluck off the leaves.

Cut sweet potatoes into small cubes.

Cut mozzarella into small cubes as well.

Prepare glass noodles according to package directions.

Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.

Place glass noodles on top, add mozzarella and sweet potatoes and sprinkle parsley on top.

Form rice paper into rolls.

Serve with dip of your choice.
