Summer Rolls with Tuna and Vegetable Filling

Instructions:

Cut cucumber into sticks.

Peel carrots and cut into very thin slices.

Wash and finely slice the leeks.

Prepare the egg noodles according to package instructions.

Season tuna with soy sauce, salt, pepper and lime juice.

Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.

Place egg noodles on top, add tuna, top with cucumbers and carrots, sprinkle cilantro leaves and form rice paper into rolls.

Serve with dip of your choice or a simple soy sauce.

Preparation Tip:

Use purple or yellow carrots, it looks especially nice.
