For Summer Sausage Salad, cut about one-third of the sausage slices into strips. Place the remaining sausage slices on a plate. Mix vinegar, salt, freshly ground pepper and olive oil to make a marinade. (If the vinegar is too acidic, sweeten with a little sugar, although the marinade should be quite a bit more acidic). Clean the oak leaf lettuce, finely slice the radishes and young onions.

Mix everything with some of the marinade and arrange on the sausage slices. Spread remaining marinade over sausage. Sprinkle sausage strips over salad. Sprinkle with freshly ground pepper. Finely slice red onion and garnish sausage salad with it. Decorate with chopped herbs.
