Instructions:

Peel and dice the potatoes and cook in the steamer for approx. 15 minutes at 100 °C.

Preheat the oven to 200 °C.

Wash and dice the melanzani and sauté in a little olive oil, add salt and let it steam a little. Add zucchini and sauté briefly.

Cut the spring onion into fine rings and place in a baking dish with the other vegetables and the herbs. Season well and add the garlic.

Cut the feta into small cubes and spread over the vegetables together with the potato cubes.

Sprinkle the rosemary sprigs on top and bake the summer vegetables at 200 °C for about 40 minutes.

Preparation Tip:

The summer vegetables with feta is a wonderful side dish for grilled food and is easy to prepare. If the cheese browns too quickly, cover with aluminum foil.
