For the yeast dough cake, mix flour and hail sugar (except for 2 tablespoons). Mix butter, sugar, milk and yeast and knead with the flour mixture to a smooth dough.

Cover and let rise in a warm place for 1 hour. Grease a springform pan (Ø 20 cm) with butter and crumble with breadcrumbs.

Preheat the oven to 175 degrees. Knead the dough again with your hands and let it rise for another 30 minutes.

Mix egg yolk and 2 tablespoons milk and brush dough with it. Sprinkle the rest of the hail sugar on top and bake in the oven for 45 minutes.

Cover the yeast dough cake after 25 minutes and bake until done.

Preparation Tip:

The yeast dough cake can also be prepared with aranzini or raisins.
