Instructions:

For the honey cake, prepare the honey dough from the ingredients listed. For this, heat honey with sugar and fat while stirring, but do not boil.

Mix the flour, spices and the remaining ingredients in a wide bowl. Add the honey mixture, not too hot, then add the egg and the potash dissolved in rose water.

Using the dough hook or a dough spoon, work all the ingredients into a smooth dough.

Cover the dough and let it stand in a not too warm place for 3 weeks. Then knead again. Grease a baking tray or grease pan and dust with flour.

Roll out the dough on it or press it in with your hands. Brush with diluted egg, mark pieces, cover with almond kernels and bake on a medium rack for 30 – 40 minutes at 160 – 180 °C. At the end, leave in the turned off oven for 5 – 10 minutes.

Cut the honey cake into pieces while still warm.

Preparation Tip:

Pure beeswax, spread over the heated ungreased tray or grease pan, gives the honey cake an exceptionally delicate flavor.
