For the turkey burger, first prepare the buns. For the buns, mix the lukewarm water with the milk and sugar in a bowl. Crumble in the yeast and let the mixture rise for about 10 minutes.

Then add flour, salt, 1 egg and the melted butter and knead for about 5 min on high speed until a smooth dough. Let the dough rise for about 1 hour in a warm place covered with a tea towel.

After this hour, divide the dough into 10 parts of about 90 g each and form into balls and spread on a baking tray lined with baking paper. The dough is very sticky, so flour the work surface and your hands a little.

Now again cover the rolls and let them rise for another hour. In the meantime, mix 1 egg with 2 tablespoons of milk and 2 tablespoons of water. Then carefully brush the buns with it and sprinkle with some sesame seeds.

Bake the rolls at 170 °C for about 20 minutes and then let them cool down a bit.

For filling, grill the turkey meat. Cut open the burger buns and also place them briefly on the grill (or in the oven) so that they become nice and crispy. Immediately place the cheese slices on the still warm meat so that it melts nicely.

Potato wedges and an herb sauce go very well with the turkey burger.
