For the vanilla snowballs, first cream the butter and powdered sugar until fluffy. Cut the vanilla beans lengthwise, scrape out the pulp and stir into the butter cream. Mix the flour and cornstarch together and add to the butter mixture. Mix everything together to form a smooth dough. Form the dough into a roll about 3 cm thick and chill.

Preheat the oven to 175 °C. Cut the roll into slices and form small balls. Place the balls on a baking tray lined with baking paper and bake for 12 minutes.

Dust the cooled vanilla snowballs thickly with powdered sugar.

Preparation Tip:

The vanilla snowballs become even more vanilla if you mix the powdered sugar with vanilla pulp for sprinkling.
