For the wheat tortillas, mix all the dry ingredients. Add the lard cut into pieces. Add enough water to make a firm dough. Roll out the finished dough very thinly with a rolling pin.

The tortillas taste best when baked on a grill over aluminum foil.

If you don’t have a grate available, bake the patties in a pan on the stove without grease. Let them brown for about 1 minute on each side. Small to medium brown spots will form on the wheat tortillas.
