Pasta dishes are always a good idea!

1. heat a large saucepan of water. Divide cauliflower into small roses. Remove skin from onion and cut into very thin slices. Remove garlic from skin and chop finely. Add pasta to boiling, lightly salted water.

Sauté the cauliflower florets in 3 tablespoons of olive oil. Once the roses begin to soften slightly, season with salt, pepper, the very thin slices of onion and the chili flakes. Continue to saute over medium heat until the cauliflower turns red (slightly brown). It should still be firm to the bite and not taste like it has been steamed.

Stir in garlic; it should not burn at all, so mix well. As soon as it takes color, add a small dash of water. Add a few drops of vinegar, the juice of a lemon and the walnuts, seasoning.

When the pasta is cooked al dente, drain and add to the cauliflower, drizzle a little olive oil over the pasta and mix well, then pour into a warmed bowl. Crumble the cheese over the pasta.
